The must is clarified and transferred to cooled stainless steel tanks, barrels made from three different types of wood (French oak, American oak, and French acacia), and clay spheres. The alcoholic fermentation starts spontaneously, allowing native yeasts to complete the winemaking process, without the use of selected commercial strains. This is where modern winemaking technology hands over to traditional winemaking. The fermentation progresses at slow rates, and the strains of yeast that prevail will ultimately determine the character of the wine in each tank and barrel. The wine matures separately in each medium for as long as possible before the final blending. Food Pairing: Sushi, lemon-infused lamb, lobster, seafood, shellfish, grilled fish. Alcohol Content: 13.5%
