The grapes are hand-harvested in small crates and transported to the winery's cooling chamber for 12 hours. This is followed by destemming and pre-fermentation cold maceration in an inert environment. Alcoholic fermentation takes place with a gradual temperature variation to enhance the varietal aromas. After the completion of alcoholic fermentation, part of the wine remains in the tank with periodic stirring of the lees (battonage) for several months, another part matures in French barrels, and the rest in clay amphorae. Food Pairing: Shellfish and seafood with white sauces, fatty fish, semi-hard aged or smoked cheeses. Alcohol Content: 13%
