Destemming without crushing, followed by a four-day pre-fermentation cold maceration. Alcoholic fermentation takes place using an indigenous yeast culture, selected and isolated from the same vineyard plot, at gradually increasing temperatures with pigeage (cap punching). The wine remains on its lees for eight months with periodic stirring. It is then aged for 12 months in carefully selected new fine-grain French oak barrels (Allier – Bertrange, white toast by steam) and an additional 12 months in the bottle. It is unfiltered and undergoes no treatment before bottling. This is a wine of great aromatic intensity, balance, and structure. It boasts depth and concentration while maintaining a fresh acidity and a distinct mineral character, a true reflection of its terroir. The seductive bouquet features complex aromas of wild cherries, subtle spices, and raspberries, while its refreshing acidity captivates even the most refined palates. Serving Temperature: 16 - 18°C Food Pairing: A perfect match for all types of white meats, from chicken and turkey to rabbit, whether grilled or prepared in delicate, refined sauces. It also pairs beautifully with pork fillet and game birds. Alcohol Content: 14.5%
