A blend of Assyrtiko and Semillon, varieties planted in the warmest and most arid part of the estate’s vineyard, on the slopes of Mount Pangaion. After a short pre-fermentation maceration, the grape juice ferments in French oak barrels, where it remains for a few months on the lees, gaining complexity and structure. It has excellent aging potential of at least 10 years. Serving Temperature: 12°C Food Pairing: Pairs well with large grilled fish, seafood risotto, sushi, stuffed turkey, and cheese soufflé.
