For the production of the base wine, an early harvest is carried out. The grapes, after cooling, are pressed whole. The must is then transferred to stainless steel tanks, where it ferments at low temperatures. The classic method follows, with a second fermentation in the bottle. The duration of the second fermentation and aging, in the presence of fine lees, lasts at least 9 months. Food Pairing: Pairs well with raw seafood, sushi, soft cheeses, and fruit salad. Alcohol Content: 12%
