Pre-fermentation cold maceration for a few days to transfer good phenolics and structure from the grape to the must, before the onset of alcohol. Fermentation takes place in stainless steel tanks with regular pump-overs for the extraction of color and tannins. After malolactic fermentation, the wine is transferred to 300-liter French oak barrels, 50% of which are new, for the final stage of 12 months of aging. It is then returned to the tanks for resting and bottling. Serving Temperature: 16 – 18°C Food Pairing: Pairs well with tomato-based dishes such as baked rooster giouvetsi or an Italian ragù, and will elevate vegetarian dishes with mushrooms and eggplant. Alcohol Content: 12.5%
