Pre-fermentation cold maceration for a few days to transfer good phenolics and structure from the grape to the must, before the onset of alcohol. Fermentation occurs in stainless steel tanks with regular pump-overs for the extraction of color and tannins. After malolactic conversion, the wine is transferred to French oak barrels, 50% of which are new, for the final stage of 12 months of aging. Serving Temperature: 16 – 18°C Food Pairing: Pairs well with braised beef shank with red wine glaze, Japanese-style steaks, classic Filet Mignon, as well as roasted lamb with garlic and rosemary. Also complements roasted eggplant, grilled Portobello mushrooms, and aged graviera cheese. Alcohol Content: 14%
