For the production of the base wine, early harvest is carried out. The grapes are pressed whole and under low pressure to extract the juice, which is fermented at low temperatures. The traditional method follows, with a second fermentation in the bottle, always under controlled conditions. The wine ages in the bottle in contact with its lees for about two years. In the final stage, riddling is performed, and the addition of the liqueur d’expedition is made. Food Pairing: Pairs well with shellfish, caviar, bottarga, and aged cheeses. Alcohol Content: 12.5%
